Piping Gel (Home made)

I love to use this recipe when I need to make “water” for my cakes, like in this Dora swimming pool cake. I just dollop it on top of my blue fondant, and voila! It's also great for anything that needs a syrup-like consistency when decorating cakes. You can add gel food coloring to it to make it whatever color you need.
- ⅓ cup granulated sugar
- 1 Tablespoon Corn Starch
- ¼ cup lemon juice (but I’ve used just a dash of lemon extract in a pinch and it works fine)
- ¼ cup water
- Mix over high heat until boiling, and then cool.
- Tint as desired!
